Indori poha is a quick and easy recipe. As this pohe doesn’t have onion, these can be made really quickly. These taste just awesome. Just steam the soaked pohe and add tadka. This is a popular street food of MP. We are making the special masala for that too. It turns out nice, fluffy and soft. There is a special method to serve this poha. We will see that too. Ingredients:
Jeeravan Masala
• 1 tsp Coriander seeds
• 1 1/2 tsp Fennel seeds
• 1 tsp Cumin seeds
• 5~6 Black pepper corns
• 4~5 Cloves
• 1 piece Javitri / Mace
• 1 Cinnamon stick
• 2 Green cardamom
• 1 Black cardamom
• 2~3 dry Red chilies
• 2 Bay leaves
• 1/4 tsp Turmeric powder
• 1 tsp Amchoor powder / Dry mango powder
• 1/2 tsp Ginger powder
• 1/2 tsp Black salt
• 1/4 tsp Hing
• Salt to taste
• 1 small piece Nut meg
Poha
• 2 cups thick Poha
• 1/2 tsp Turmeric powder
• Salt to taste
• Sugar to taste
• 2 tbsp Oil
• 1/4 cup Peanuts
• 1 tsp Mustard seeds
• 3 finely chopped Green chilies
• 4 Green chilies

Method:
Jeeravan Masala
• Heat up a pan on medium heat and roast coriander seeds, fennel seeds, cumin seeds, black
pepper corns, cloves, mace, cinnamon, green cardamom, black cardamom, dry red chilies,
bay leaves together for about 4-5 minutes.
• When spices begin to release aroma turn off the gas and blend it together into fine powder in
mixer when it cools down.
• Add turmeric powder, amchoor powder, ginger powder, black salt, hing, salt, nut meg and
blend it again into powder.
• Transfer it into a bowl and jeeravan masala is all ready.
Poha
• Wash poha really good 2-3 times and rest it for about 5 minutes.
• Add turmeric powder, salt, sugar and mix well.
• Heat up oil in a tadka pan and add peanuts.
• Fry well until peanuts turn brown and take them out into a dish.
• In the same oil add mustard seeds and let them pop up.
• Add green chilies and fry well.
• Turn off the gas and add this tadka into poha mixture. Mix well.
• Transfer the poha into a dish and insert green chilies into it.
• Steam the poha on medium heat for about 15 minutes.
• Take the poha out.
• Serve poha into a dish and sprinkle jeeravan masala, lemon juice, finely chopped onion, shev,
khari boondi, fried peanuts, finely chopped coriander leaves, pomegranate seeds and
steamed green chili.
