Fulkopi Diye Haser Dimer Jhol (Duck Egg and Cauliflower Curry) is a classic Bengali dish known for its light, flavorful broth, perfect for a comforting meal. This dish combines soft, fluffy duck eggs with tender cauliflower in a mildly spiced, soupy gravy. The simplicity of the ingredients allows the natural flavors of the cauliflower and duck eggs to shine, making it a delightful option for a light lunch or dinner, especially when paired with steamed rice.

Ingredients:

Duck eggs (boiled)
Cauliflower (cut into medium florets)
Potatoes (cut into wedges)
Tomatoes (chopped)
Onion (sliced)
Ginger Garlic paste
Cumin seeds
Bay leaf
Turmeric powder
Red Chilli powder
Coriander powder
Kashmiri Chilli powder
Garam masala
Mustard oil
Salt to taste

Method:

Boil and Fry the Eggs: Boil the duck eggs and peel them. Shallow-fry them in mustard oil until lightly golden. Set aside.

Fry the Vegetables: In the same pan, lightly fry the cauliflower florets and potato wedges until they have a slight golden crust. Set them aside.

Prepare the Curry Base: In the same oil, add cumin seeds and a bay leaf. Once they start to crackle, add the sliced onions and fry until translucent. Add ginger garlic paste, sautéing for a few minutes until fragrant.

Add Spices: Stir in turmeric, red chilli, and coriander powders. Add the chopped tomatoes and cook until they soften and blend into the spices.

Simmer the Jhol: Add the fried cauliflower and potatoes, and pour in water to create a light, soupy consistency. Season with salt, and let the vegetables simmer until tender.

Finish with Duck Eggs: Add the fried duck eggs into the curry and let them simmer for 5-7 minutes, absorbing the flavors of the jhol. Adjust the seasoning with a pinch of sugar and sprinkle garam masala at the end.

Serve: Garnish with fresh coriander leaves and serve hot with plain steamed rice for a wholesome, comforting meal.
