Ingredients

FOR MASALA

1 medium size onion
bunch of mint leaves
bunch of fresh coriander leaves
handful of cashews
1 inch piece sliced ginger
some garlic cloves
3 green chilies
and some water to grind

FOR CHICKEN FIRST MARINADE

1 kg chicken with bones (big size cuts)
1/2 lemon juice
1/2 tea spoon ginger garlic paste
1 tea spoon salt.

FOR SECOND MARINADE AND CREAMY GRAVY BASE

2 table spoon of Thick Curd
200ml of fresh cream
1 tea spoon of kasuri methi
1/2 tea spoon of black pepper powder
1/2 tea spoon of cumin powder
1/2 tea spoon of salt.

FOR CHICKEN ROASTING / FRYING

1 cube of butter
2 - 3 table spoon cooking oil

FOR FINAL COOKING

1 big cube of butter
2 table spoon cooking oil
1 inch of cinnamon stick
1/2 tea spoon of black peppers
5 nos of green cardamoms

FOR FINAL TOUCH OR FINISHING OF DISH

1/2 tea spoon of kasuri methi
1/2 tea spoon garam masala powder
pinch of black pepper powder and
some freshly chopped coriander leaves.

Process and Method.
To create the masala paste for your recipe, place the following ingredients in a mixi jar: one medium-sized onion, a bunch of fresh mint leaves, a bunch of fresh coriander leaves, a handful of cashews, a one-inch piece of sliced ginger, several garlic cloves, and three green chilies. Add a small amount of water to facilitate blending, and grind until you achieve a smooth paste.

Now In a mixing bowl, place 1 kg of large-sized chicken cuts with bones. Add 1/2 lemon juice, 1/2 teaspoon of ginger garlic paste, and 1 teaspoon of salt. Mix all these ingredients thoroughly, and keep aside.

In another bowl, mix 2 tablespoons of thick curd, 200 ml of fresh cream, 1 teaspoon of kasuri methi, 1/2 teaspoon of black pepper powder, 1/2 teaspoon of cumin powder, and 1/2 teaspoon of salt. Stir everything together until it's well mixed.

Now, add the prepared green masala to this bowl and mix it thoroughly. After that, place all the chicken pieces in the same bowl and ensure they are well coated with the mixture. Allow the chicken to rest for about half an hour to marinate.

Now Separate chicken pieces from marinade

On a heated grill pan, add 1 cube of butter and 2-3 tablespoons of cooking oil. Once the butter is melted and the oil is hot, place the marinated chicken on the grill pan. Fry the chicken on both sides for approximately 7 to 10 minutes.

In a heated kadai or pan, add 1 big cube of butter, 2 tablespoons of cooking oil, 1 inch of cinnamon stick, 1/2 teaspoon of black peppers, and 5 green cardamoms. Stir these ingredients together.

Now add remaining marinade base in this kadai and mix well, Then add all cooked chicken. mix all well, Cover and cook for 15 - 20 minutes.

Remove cover and add some kasuri methi, garam masala powder, pinch of black pepper powder and some freshly chopped coriander leaves.

Delicious Cream and Aromatic Afghani Chicken is ready to be served.
