Recipe :
Paneer Kali Mirch
Preparation time: 15 minutes
Cooking time: 25 minutes
Serves: 4

Ingredients:
250g Paneer, cubed
2 onions, finely sliced
1 tbsp ginger garlic paste
½ tsp garam masala
½ tsp cumin powder
½ cup yoghurt
2 tsp black peppercorns, crushed
salt or to taste
3 tbsp refined vegetable oil
3 tbsp cream
½ tbsp crushed dried fenugreek leaves (kasuri methi)
1 bay leaf
1 black cardamom
3-4 green cardamoms
½ mace
1 tsp cardamom powder

Method:
Heat 2 tbsp oil in a pan and sauté the onions until softened and pink. Do not allow them to brown at all.
Puree the onions in a blender with ¼ cup water.
In the same pan, lightly grill the paneer pieces.
In the same pan heat the remaining 1 tbsp oil. Add the whole spices and the crushed peppercorns. Allow th5e spices to splutter.
Add the onion paste, ginger garlic paste, and cook till the raw smells of the ginger and garlic disappear.
Add in the whisked yoghurt and salt to taste.
Stir continuously till the yoghurt comes to a boil.
Add the paneer cubes, cumin powder, garam masala powder, crushed fenugreek leaves, ½ cup water and simmer covered over moderate heat for 5 minutes.
Add the cream and cook for another minute.
Sprinkle, cardamom powder cover and set aside for 4-5 minutes.
Remove from heat, adjust seasoning and serve hot.
