Recipe:

Ingredients:
1/2 cup warm water (105-115 degrees)
1/6 cup oil or melted butter (approximately 2 1/2 tablespoons)
1/8 cup sugar (2 tablespoons)
1 1/2 tablespoons active dry yeast
1/2 large egg, beaten (you can approximate this by whisking and using approximately half)
3/4 teaspoon French salt (or regular salt)
1 1/4 cups Kamut flour (or about 1 1/2 C All Purpose)

Directions:
1. In a large bowl, mix the water, oil, sugar, and yeast. Let sit until it blooms, about 10-15 minutes.
2. Add the beaten egg, salt, and flour. Stir together.
3. If doing by hand, turn the dough out onto a lightly floured surface and knead until smooth - about 5 minutes. Add more flour if needed until the dough does not stick to the surface.
4. Preheat the oven to 425°F (220°C).
5. Roll the dough out 1/2 inch thick on a lightly floured surface. Shape the dough into 10 buns.
6. Spray a baking sheet with cooking spray and place the buns about 2 inches apart.
7. Cover with a dish towel and let the dough rise for 15 minutes.
8. Bake for 5 minutes on the bottom rack, then move to the middle rack and bake for an additional 5 minutes or until golden brown.
9. Let cool on a wire rack. Store in plastic bags until ready to use or freeze for up to 3 months.

This adjusted recipe should yield approximately 10 buns.
