Keep in mind that as soon as it is cut it have a beautiful pink color and then after a few hours the color will tend to hazelnut colour 😉
For this recipe I used:

Pork Rump 3 kg
Water 1.5 liters
Sea salt 180 g
Garlic 1 clove
Bay leaf 2 leaves
Clove 1
Juniper 3 berries
Black pepper 10 grains
Cinnamon 1 pinch
Nutmeg 1 pinch
