Proteins are polymers of amino acids, also know as polypeptides
Peptide bond joins amino acids
20 Different amino acids, variable “R” groups give them different properties

Have diverse range of functions, many are enzymes which are biological catalysts

4 levels of protein structure
Primary – linear sequence of amino acids
Secondary – local folding, alpha helix, beta sheet
Tertiary – overall 3D structure determined by interactions of “R” groups
Quaternary – when multiple polypeptides interact

Denaturation – unfolding of a protein

Chaperones – provide favorable environment for proteins to fold in
