Todays recipe is my amazing carrot cake.

who doesn't love a carrot cake... its a classic.
This cake is super sweet with a hint of orange and packed full of flavour thanks to the mixed spice and walnuts.
To top it off it has a delicious vanilla cream cheese topping.

You really need to try this cake.


Ingredients you will need to make this amazing carrot cake:
100g walnuts
300g carrots
200g light brown sugar
250g self raising flour
1 orange
3 eggs
2tsp ground mixed spice
half tsp bicarbonate of soda
1/2tsp salt
200ml oil

For the cream cheese frosting:
300g cream cheese
splish vanilla extract
110g butter
100g icing sugar
