His guest in tasting these unique dishes? Stand up comedian Appurv Gupta, who looks on intrigued as he observes the Chef doing his magic in the kitchen.

CHICKEN WINGS
INGREDIENTS
7-8 chicken wings
Generous pinch of salt
1 tbsp. ginger & garlic paste
1 tbsp. green chilli paste
2 lemons
½ cup dry pomegranate seeds
1 cinnamon stick
2 black cardamom
12 peppercorns
½ cup dry coriander seeds
1 tbsp. cumin
4- 5 cloves
3 tbsp. mustard oil
1 tsp. red chilli powder
½ tsp. turmeric powder
½ tbsp. green chilli paste
1 tbsp. ginger & garlic paste
1 tbsp. roasted flour
Pinch of black salt
Pinch of salt
½ lemon
2 tbsp. yoghurt (thick)
3 tbsp. oil
1 tbsp. chopped coriander leaves
½ lemon juice
3- 4 lemon slices for garnishing
METHOD
• Marinate chicken wings with salt, ginger garlic paste, green chilli paste, lemon juice and keep it aside for 15- 20 minutes.
• Roast dry pomegranate seeds in a pan. Once roasted, let it cool down. Grind it coarsely.
• Dry roast the spices in a heated pan, add cinnamon stick, black cardamom, peppercorns and stir it. In a food processor, add this mixture, pomegranate seeds mixture and blend it to a semi-powder mixture.
• For second marination, in a big plate, add mustard oil, red chilli powder, turmeric powder, spices mixture.
• Add green chilli paste, ginger & garlic paste, roasted flour, black salt, salt, thick yoghurt and mix it well. Add chicken wings and marinate it.
• Add oil in a heated grill pan, add marinated chicken wings. When one side is brown, flip it and brown the other side. Once cooked, garnish with chopped coriander leaves, lemon juice and sliced lemon and serve it hot.
APPLE SANGRIA
INGREDIENTS
2 tbsp. chopped red apple
2 tbsp. chopped green apple
1 valencia orange
½ orange juice
1 tsp. cinnamon powder
1 tbsp. apple cider vinegar
1 cup ginger root beer
1 cup ginger ale
2 star anise
2 cinnamon stick
RECIPE
• Chop apple, green apple, valencia orange into small cubes and add it into glass.
• Squeeze the orange juice, add cinnamon powder, apple cider vinegar, ginger root beer, ginger ale, star anise and cinnamon stick. Ready to drink.
