Taste of Peru ep. 2: Arroz Tapado 🍚🌶️💫 this was my absolute favourite as a kid, it’s basically layers of rice and meat, and the meat mixture is well spiced and has olive and raisin pieces throughout. Might sound odd to some but I’m telling you it is incredible!

It’s typically served with a fried egg on top + some fried plantain, which I didn’t have time to grab at the store unfortunately but next time. There are of course so many variations of this dish, and for this one I used beyond meat because I don’t personally eat meat but still wanted to enjoy a classic from my childhood.

To elaborate further, yes Peruvian food is consistently voted #1 in the world and it’s a shame that more people don’t know about it! My goal for this series is to get the word out on my little corner of the internet to show people how delicious and versatile Peruvian dishes are. And also to make it more accessible for people who are vegetarian or plant-based.
