Gondhoraj lebu, known as the king of aromas, is a beloved ingredient across the world. And today I will show you how to add a zesty twist to your usual kebabs and take it to a whole new level. Known for its distinct citrusy fragrance, Gondhoraj lebu is a type of lime that adds a unique tangy flavor and aromatic touch to dishes. Its fresh, zesty essence elevates the kebabs, making them lighter and more refreshing than your typical version.
Super simple to make, these gondhoraj lebu kebabs are smoky, creamy, aromatic and bursts with flavour. Seriously, once you taste these, you might just forget about ordering kebabs from restaurants!
Perfect for impressing your friends and family, this flavourful snack will hit the spot every time.
Ingredients:
• Zest of 2 Gondaraj lemons
• 5 green chillies
• 1 medium onion
• 15-18 garlic cloves
• 1-inch ginger
• 2 tablespoons coriander, chopped
• 2 tablespoons water
• 600g chicken, cut into strips
• 1 cup fresh cream
• 1 cup hunk curd
• 1 teaspoon jeera (cumin) powder
• 1 teaspoon coriander powder
• 1.5 teaspoons salt (adjust to taste)
• 2 tablespoons Gondaraj lemon juice
• 1 teaspoon ghee
• Charcoal and 2 cloves (for smoking)
• Butter (for basting)
Method:
1. Blend lemon zest, green chillies, onion, garlic, ginger, coriander, and water into a fine paste.
2. Add the paste to the chicken strips.
3. Mix in fresh cream, hunk curd, jeera powder, coriander powder, and salt.
4. Add Gondaraj lemon juice and marinate the chicken for a few hours or overnight.
5. Smoke the chicken with charcoal, cloves, and ghee for 15 minutes.
6. Skewer the chicken, baste with melted butter, and air fry for 35-40 minutes at 180°C, until golden and cooked through.
• Alternatively, bake at 220°C or cook on a tandoor/gas stove.
7. Before serving, brush with more melted butter and squeeze some Gondaraj lemon juice. Serve with a salad.
