Happy Mother’s Day to all the mamas. This is one of my mom’s favorite dish. She came over to visit us, so I decided to make this dish.

It’s also a dish that when I get tired of white rice, I want a plate of broken rice. There is a broken rice to do it right, but I don’t have it at home. So I try to fake my rice to be broken rice by breaking them.

Special thanks to my Instant Pot and steamer pans which help to make this dish quicker.
I hope you like this dish as much as I do.

INGRIDIENTS:

Egg Meatloaf:
1 pound ground pork
1 clove garlic
1 Tbsp yellow onion
3 Tbsp green onion
1 Tbsp sugar
1 Tbsp shallot
1 Tbsp chicken bouillon
1 tsp fish sauce
½ tsp black pepper
⅓ cup dried mushroom (soak in warm water 15 mins)
½ cup bean thread noodle (soak in warm water 15 mins)
5 eggs
2 egg yolks
1 tsp annatto oil
2 tsp vegetable oil
2 tsp Vegetable oil
2 tsp vegetable oil

Pork chop:
1.3 lbg pork chop
1 tsp garlic
1 Tbsp shallot
½ tsp chicken bouillon
1 tsp pepper
1 Tbsp soy sauce
1 tsp Oriental Spices for Catfish Paste
1/2 Tbsp sugar
1/2 tsp chilli
1/2 tsp salt
2 Tbsp oil

Fish sauce;
0.9 ounces vinegar
1/4 cup sugar
1 cup water
1/4 tsp salt
2 Tbsp fish sauce
1 Tbsp minced garlic
1 tsp chilli


INSTRUCTIONS:

Broken Rice:
Wash Jasmine rice until the water is clear (the best is to use the original broken rice, but I don’t have any at home). Then soak for an hour. After an hour, use your hands to break the rice. Then pour rice into steamer pan with 1 cup of water.

Egg Meatloaf:
Soak black fungus and vermicelli into water for about 15 mins. Then cut them in small pieces.
Prepare a large bowl and add 1 pound ground pork, 1 clove garlic, 1 Tbsp yellow onion, 3 Tbsp green onion, 1 Tbsp sugar, 1 Tbsp shallot, 1 Tbsp chicken bouillon, 1 tsp fish sauce, ½ tsp black pepper, ⅓ cup dried mushroom, ½ cup bean thread noodle, and 5 eggs. Mix them well, use a spatula to stir lightly so the minced meat is spread out evenly. Then transfer to steamer pan.

Use 2 cups of water for instant pot to steam rice and egg meatloaf. Rice will be on the bottom pan, egg meatloaf will be on the top. Turn on steam mode for 25 mins and let natural release for 10 mins.

After 10 mins natural release. Take it out and use skewer to poke all over the egg meatloaf (this helps keeps the surface even). Use 2 egg yolks and mix with 1 tsp of annatto oil and combine them well. Then spread it to the top of the egg meatloaf to create a nice yellow color.

Then place only the egg meatloaf back to the instant pot, do not close the lid completely. And turn on saute mode for another 5 mins until the egg yolk has completely dried. Tip: you can add sesame oil after to help it shiny.

Pork Chops:
Season pork chops with all the ingredients for an hour.

In a frying pan, add 1 Tbsp of oil on a medium high heat. When the oil is hot, fry the pork chops until one side is brown then turn to the other side and fry until it’s brown.

Dipping Sauce/Fish Sauce:
In a small pot, add 0.9 ounces of vinegar, ¼ cup of sugar, 1 cup of water and ¼ tsp salt on a low heat. Turn off the heat and add 2 Tbsp of fish sauce. Wait for it to cool down, then add minced garlic and minced chili (the garlic and chili will float of top if the fish sauce is properly cooled down)
