Resep Pepes Dada Ayam (untuk 5-6 porsi)
Bahan:
250 gr dada ayam filet
1 sdt garam
1 sdt kaldu jamur
1 sdm gula pasir
¼ sdt merica
1 butir putih telur
3 sdm santan
1 sdm maizena
Bahan bumbu halus:
5 siung bawang merah
4 siung bawang putih
3 cm kunyit
3 butir kemiri
3 cm lengkuas
5 buah cabai merah keriting
80 ml air
Bahan lainnya:
1 buah tomat merah
5 buah cabai rawit merah
5 lembar daun jeruk
2 batang daun bawang
15 gr kemangi
1-2 sdm minyak
daun salam
serai
daun pisang
Pelengkap:
nasi putih
Cara membuat:
1. Potong-potong bawang putih, bawang merah, geprek kemiri dan iris lengkuas
2. Panaskan minyak, masukkan bawang putih, bawang merah, kemiri, lengkuas, kunyit dan cabai merah keriting, tumis hingga wangi dan kecokelatan
3. Masukkan bumbu yang sudah ditumis dan air ke dalam blender, haluskan
4. Potong tomat, daun bawang, iris daun jeruk dan cabai rawit merah
5. Iris tipis memanjang dada ayam kemudian masukkan garam, kaldu jamur, gula pasir, merica, bumbu halus, santan dan putih telur, aduk rata
6. Masukkan maizena, aduk rata kemudian masukkan cabai rawit merah, daun jeruk, tomat merah, daun bawang dan kemangi, aduk rata
7. Siapkan daun pisang, letakkan serai yang sudah diiris, daun salam dan ayam, bungkus dan sematkan tusuk gigi
8. Kukus ayam selama 30 menit. Untuk penyimpanan frozen, dinginkan terlebih dahulu pepes ayam lalu tutup dengan cling wrap satu per satu
9. Pepes dada ayam siap disajikan

Chicken Breast Pepes Recipe (yield 5-6 servings)
Ingredients:
250 g chicken breast fillet
1 tsp salt
1 tsp mushroom bouillon
1 tbsp sugar
1/4 tsp pepper
1 pc egg white
3 tbsp coconut milk
1 tbsp cornstarch
Spices:
5 pc shallot
4 clove garlic
3 cm turmeric
3 pc candlenut
3 cm galangal
5 pc curly red chili
80 ml water
Other ingredients:
1 pc red tomato
5 pc red Thai chili
5 pc kaffir lime leaf
2 stalk green onion
15 g lemon basil
1-2 tbsp oil
Bay leaf
Lemongrass
Banana leaf
To serve:
White rice
Steps:
1. Slice the garlic, shallot, and galangal. Crush the candlenuts.
2. Heat oil. Add garlic, shallot, candlenut, galangal, turmeric, and curly red chili. Sauté until fragrant and browned.
3. Blend the sautéed spices with water until smooth.
4. Slice the tomato, green onion, kaffir lime leaf, and red Thai chili.
5. Slice the chicken breast thinly, then mix with salt, mushroom bouillon, sugar, pepper, blended spices, coconut milk, and egg white.
6. Add cornstarch and mix well, then add red Thai chili, kaffir lime leaf, red tomato, green onion, and lemon basil. Mix again.
7. Prepare the banana leaf. Place sliced lemongrass, bay leaf, and chicken. Wrap and secure with a toothpick.
8. Steam chicken for 30 minutes. For freezing, let the Pepes cool completely, then wrap each one in cling film.
9. Chicken Breast Pepes is ready to serve.
