How to make Laab with Beef and Omasum (tripe). Laab is a traditional Lao salad that's spicy, nutty, sour, and herbaceous. Laab is also eaten widely in Thailand and Cambodia, and there are many variations.

🌶️ INGREDIENTS
(NOTE: be mindful of the saltiness of the brands of padaek/pla ra and fish sauce you use, and sourness of the limes, taste and adjust the amounts to your liking. The leading flavor should be sour, followed by umami and salty)

Beef - 1 lb or 454 g
Water - 1/4 cup
Fish Sauce - 1 tsp

Omasum - 1/4 lb or 113 g
Lemongrass & Galangal - See video for technique

Lemongrass - 1 lower half stalk
Galangal - 1/2 inch knob
Kaffir Lime Leaves - 4 leaves
Shallots - 2 small bulbs
Red Chilis - as much as you'd like
Sugar - 1 tbsp
Msg - 1/2 tsp
Fish Sauce - 1 tbsp
Juices from Beef - 1/2 cup
Padaek/Pla Ra (Nang Fa Brand) - 1 tbsp
Padaek/Pla Ra (Zap Ver Brand) - 1.5 tbsp
Lime juice - 3.5 tbsp to 4 tbsp
Rice powder - 4 tbsp
Red chilis - as much as you'd like
Crispy Fried Dried Chilis - as much as you'd like
Mint - 2 handful
Scallion - 3 stalks
