An a la carte menu is essential to chefs. What does a la carte mean?

In many restaurants, the chef will give a selection of menus.
These menus include a:
Breakfast menu,
Lunch menu,
Dinner menu
A la carte menu.
The menu used by the restaurant will depend on the size, quality and what the chef wants to offer. A hotel will have a breakfast menu whereas a bistro-style place may not.

Most restaurants will have a set menu, this is a menu that is at a set price for instance: 2 courses for £21 or 3 courses for £25. The menu will be set with no variations available. The next main menu is the a la carte menu.

Meaning of a la carte
An a la carte menu is a menu that offers maybe 7 starters, 7 mains and 7 desserts. The customer has the option to build the menu themselves through the choices they pick. Many a la carte menus can change seasonally.

This means four times a year the chef will create a menu designed with the food that is in season at that time of year. The summer months will have different foods in the season than the winter months and the a la carte menu will vary accordingly.

A summer dish on an a la carte menu will include ingredients available during the summer months. These months include June and July. The winter dishes on an a la carte menu will be made up of ingredients available in the months including November and December.

The chef will need to be highly creative and skilled to be able to design, prepare, cook and serve a menu based on the seasons.

The restaurants offering an a la carte menu can be a lot more intense for the chefs. An extremely busy night may mean only serving 70 customers. However, the complexity of preparing, cooking and serving the dishes is at a much higher standard.

Many a la carte restaurants will have awards such as aa rosettes and the standard will need to be kept high at all times. Working in an a la carte restaurant can be a rewarding experience for the chef, there will be a lot to learn as to how to prepare and cook foods the correct way.
