Who says you can't have an Authentic barbacoa flavor right on your stovetop. What usually is a long days process we get it done in 3 hours. BEWARE ⚠️ this is a recipe my family requests often and not just for the holidays. DON'T SAY I DIDN'T WARN YOU...

Ingredients
4 pounds of chuck beef (diesmillo en troso)
2 pounds of beef neck bone (espinazo)
4 cups of water (see tip below)
2 Ancho chiles
4 Guajillo chiles
3 bay leaves
2 tomatoes
4 garlic cloves
1 onion
1/2 cup long grain rice (if using enriched rice use 3 Tbsp)
1 can of garbanzo beans
1 tsp freshly ground cumin
1 tsp thyme
1 tsp black pepper
1/2 tbsp coarse sea salt (adjust to your liking after everything is done cooking)
1 maguey leaf found at local Mexican markets (you can substitute with banana leaves or 3 oz of mezcal (feel free to skip and make it comfortable for your home)
Optional- Mesquite bits but highly recommended for authentic flavors and best compliments to our recipe


How to make authentic BARBACOA beef
Clean maguey leaf then Warm up maguey leaf until flexible and place into the steamer basket
Slightly toast Guajillo and ancho chiles and mesquite bits if you chose
Season beef with 1 tsp salt and pepper
Add water, chiles, bay leaves, tomato, garlic, onion, rice, garbanzo, cumin, thyme, black pepper, and salt into pot and give it a loving mix : )
Add the steamer basket and place pieces of beef and top with maguey leaf
Cover with foil tightly to keep the flavorful vapors in the pot
Bring the pot to a vigorous boil, then place your burner on med-low heat and cook for 3 hours (do not exceed 4 hours as you’ll beef will get dry)
Carefully remove the foil and maguey leaf
Lift the steamer basket and remove beef onto a cutting board and with a fork and no effort shred the barbacoa to your liking
Assemble the barbaco tacos and Buen provecho (Enjoy!)

TIP❣️
If you need more broth add 2 cups of HOT water to consomme mix and boil for 5 mins
If you have loved ones that work in the cold, this makes for a perfect meal
(wrap it warm in plastic, then foil, and a clean kitchen cloth to keep warm)
This recipe is best made on a day off so you can enjoy and feast with your family and friends
