If you ever wondered what 2 in 1 means? Well here you are!
Sharing the recipe of a Sweet & a savoury Laccha Mathri, both of which look the same but taste absolutely different!
These Laccha mathri are made with the same dough, shaped the same, fried at the same time but then one laccha mathri is coated in a sugar syrup and the other is tossed in a spicy masala!
It cuts down on your efforts, saves time because you can then make 2 Laccha Mathri at the same time. One sweet laccha mathri and one savoury laccha mathri.

Sweet & Savoury Laccha Mathri
Preparation Time: 20 minutes
Cooking Time: 20-30 minutes
Serves: 8-10

Ingredients:
For the dough:
3 cups maida
6 tbsp ghee
Oil to fry

For the Syrup:
1 cup sugar
Saffron
Pinch of yellow colour (optional)

For the Masala:
2 tbsp chat masala
1 tbsp red chili powder
1 tsp Kala namak
1 tsp Salt
1 tbsp Roasted cumin powder

For the Satha:
¼ cup flour
¼ cup oil

Method:
Add the salt and ghee to the flour. Rub ghee into the flower till it resembles bread crumbs.
Add a little water at a time and knead the dough till it is smooth yet stiff.
Rest the dough for 10 minutes.
To prepare the sugar syrup, Take One Cup sugar and One Cup water in a pan and bring to a boil. Reduce the heat and simmer for 6 to 7 minutes. Add the saffron and the yellow food colour and mix well.
To prepare the satha, mix together the flour and the refined vegetable oil and set aside.
For the masala mix together all the ingredients.
Break the dough into lemon sized balls.
Roll the dough ball into a large puri.
Apply the satha over the puri, leaving the edges.
Make cuts across the Puri as shown in the video.
Carefully roll the poori, twist slightly and roll up to make a dough ball.
Press the dough balls lightly. Prepare all the dough balls.
Heat 2 inch oil in a pan.
At the prepared mattress to lukewarm oil. Allow to fry for 3 to 4 minutes. When the mathri start turning colour, swirl the oil in the pan by swirling the pan itself.
Cocktail the mattress are golden in colour and remove to an absorbent sheet.
Quote half the mattress with the prepared masala and depth the remaining half of the materials in the prepared sugar syrup.
Garnish the Sweet mathris with chopped pistachios and silver foil.
