There are few things as craveable as a platter of juicy-charred al pastor tacos – it's one of my all-time favorite foods!

While my favorite street carts and taquerias prep their pork al pastor using a vertical spit roast, I've always wondered how I could recreate those traditional flavors & textures using the ingredients & equipment that I have at home.

This Chicken al Pastor recipe is the result, and there are 2 secrets:
1. A 10-minute homemade al pastor marinade, which gives the chicken the signature color & earthy flavor of traditional al pastor. Achiote is a non-negotiable ingredient – the type I use is linked below.
2. An easy bake-then-broil method ensures the chicken is totally juicy, but has the crispy-charred edges that mimic traditional spit roasting.

All in all, it's an easy 40-minute dinner recipe, and the oven does all the work. Serve in tortillas or make a rice bowl with all of your favorite fixings. ♡ Happy cooking!
