Hello Everyone & Welcome to Purabi's Kitchen,
Today's Recipe is Sattu Ka Paratha, a Bihari delicacy prepared from roasted chana dal stuffed into wheat dough along with spices & herbs, greased generously with oil & served hot with dahi, achaar or even better, baingan ka bharta to enjoy the parathas at its best level!

Ingredients :
1. Sattu / Roasted Chana Dal (1.5 Cup)
2. Salt
3. Chopped Onion
4. Chopped Green Chillies
5. Chopped Coriander
6. Mustard Oil
7. Ajwain
8. Red Chilli Pickle
9. Water
10. Wheat Flour
11. Refined Oil

Procedure :
1. In a bowl of sattu, add salt, chopped onion, green chillies and coriander. Then add mustard oil, ajwain and red chilli pickle in it.
2. Give it a mix and add a bit of water to bind it all together.
3. In a bowl of wheat flour, add salt, ajwain and water, then knead to a soft dough.
4. Split the dough into balls as per the servings. Roll and flatten each dough-ball on the palm of your hand and make hollow cups out of it.
5. Stuff the sattu mix evenly inside the hollow dough ball, and fill generously & evenly.
6. Cover the dough ball and roll it out flat, though make sure that the dough does not break apart during this process.
7. On a pre-heated tawa, add a bit of refined oil and lay the paratha on it. Cook the paratha on both the sides while alternatively applying oil over the parathas.
8. Lastly, serve these hot Sattu ka Paratha with curd & pickles of your choice. Remember, you can always enhance this dish by having Baingan Ka Bharta as your side-dish!
