Do you love eggplant in the meals? There are many cooking ways of eggplant around the world and some are grilled, some are boiled, some are deep fried etc.

But have you tried “Burmese grilled eggplant salad” yet? It is so simple, easy yet so so delicious salad. Moreover, it is suitable for Vegans and vegetarians. Grilled eggplant salad is originated from the middle part of the Burma where have farms that are growing peanuts and producing peanut oil. Hence, you may find that many dishes at the middle of the Burma use plenty of oil. In old times, peanut oil is produced by pounding the peanuts manually or using ox but nowadays, there are a few businesses left doing so. Manually pounded peanut oil is more fragrant than that produced by machines.

Grill eggplant salad is infused with sweetness of eggplant, freshness and fragrant of chilli and oil is just perfect to be served with freshly cooked rice. I wanted to have it again while writing this.
