******Ingredients and Instructions ****************
Achari Spice Mix -

Dhaniya | Coriander Seeds - 1 Tbsp
Saunf | Fennel Seeds - 1/2 Tbsp
Dry Red Chillies - 2-3
Methi | Fenugreek Seeds - 1/2 Tsp
Rai | Mustard seeds - 1 Tsp
Kalonji | Nigella seeds - 2 Tsp
Cloves - 2-3
Star Anise - 1 to 2 pcs
Javitri | Mace - 1 flower

Dry roast all the ingredients on a skillet till fragrant.
After they are cool to touch, grind them in a mixer. You can either make it fine powder or leave it a little coarse.


Ingredients -
Kalonji | Nigella seeds - 1 Tsp
Methi | Fenugreek Seeds - 1/2 Tsp
Saunf | Fennel Seeds - 1/2 Tsp
Kali Mirch | Black Peppercorn - 1/2 Tsp

Mustard oil to pan fry potatoes
Baby Potatoes - 450 gm

Mustard Oil - 1 Tbsp
Hing | Asafoetida - 1/2 Tsp
Jeera | Cumin - 2 Tsp
Dal Chini | Cinnamon Stick - 1 inch
Kali Mirch | Black Peppercorn - 1/2 Tsp
Hard Elaichi | Green Cardamom - 2 pcs
Onion - 150 gm
Ginger Garlic Paste - 2 Tbsp
Green chili (Long ones / Low heat) - 2 Pcs
Haldi | Turmeric - 1 Tsp
Degi Red Chili Powder (Not hot mostly used for color) - 2 Tsp
Hot Red Chili powder - 1/2 Tsp
Achari Masala ( Store Bought or Home made) 1.5 Tbsp
Kitchen King Masala - 1 Tsp
Tomato (Finely chopped) - 170 Gm
Salt - 1 to 1.5 Tsp
Water - 1/2 Cup
Sugar - 1/8 Tsp or a Pinch

Cilantro for Garnish
