In this video, I’m inviting you to spend a calm winter day with me as I get ready for the holiday season. We’ll make a cup of hot chocolate, visit IKEA for Christmas inspiration, decorate the apartment with candles, fairy lights, and sentimental cards, and enjoy the soft beauty of late autumn. I’ll also share two comforting recipes — thin pancakes with a cottage cheese & apple filling, and my favourite easy marinated chicken. Winter is my season of home cooking, warm lights, and quiet joy, and I’m so happy to share these moments with you.

Thin Crêpes with Cottage Cheese & Apple Filling

Ingredients (Crêpes)
• 500 ml milk
• 3 eggs
• 200 g flour
• 30 g butter or vegetable oil (about 2 tbsp)
• 30 g sugar (about 2 tbsp)
• 2–3 g salt (½ tsp)
Ingredients (Filling)
• Cottage cheese
• Apples
• Butter
• Sugar
• Cinnamon
• Sour cream

Instructions
1. Prepare the ingredients
For the best results, let all ingredients come to room temperature. Remove the eggs and milk from the refrigerator in advance.
If using butter, melt it and let it cool before adding it to the batter.
2. Make the crêpe batter
1. In a large bowl, whisk together the eggs, sugar, and salt.
2. Add 100–150 ml of the milk to the egg mixture.
• Adding all the milk at once would make the batter too runny before adding the flour, so it’s easier to combine ingredients gradually.
3. Sift the flour into the bowl and whisk until smooth.
• Sifting removes lumps and any impurities—don’t skip this step.
4. Pour in the cooled melted butter (or vegetable oil) and mix again.
5. Add the remaining milk and whisk until the batter becomes smooth and thin—similar to heavy cream in consistency.
3. Cook the crêpes
Heat a pan over medium heat and lightly grease it if needed.
Pour a thin layer of batter and cook each crêpe for 1–2 minutes per side, until lightly golden.
4. Make the filling
1. Peel and chop the apples.
2. Sauté them in a pan with butter, sugar, and cinnamon until soft and fragrant.
3. Mix the warm apples with cottage cheese. Add sugar and sour cream to taste.
5. Assemble
Place a spoonful of the cottage cheese–apple filling inside each crêpe, roll or fold, and serve warm.
