Recipe:
A
250gm salted butter
150gm castor sugar
4 egg yolks
210gm sifted self raising flour (sift the flour 1st b4 weighing)
70gm milk
1 tsp vanilla essence

B
2 1/2 tsp cocoa powder
1 sachet instant coffee powder
1 1/2 tbsp hot water

C
5 egg whites
1/4 tsp cream of tartar
50gm castor sugar

1. Line pan with parchment paper or grease and flour the pan. Set it aside.
2. Preheat oven to 170c.
3. (B) Mix cocoa powder, instant coffee powder and hot water. Stir to form a paste.
4. (A) Beat butter and sugar for 5mins / till white and fluffy. Add in 1 egg yolk at a time. Alternately add in self raising flour and milk, starts with self raising flour. Add in vanilla essence.
5. Take out 1/3 of yellow batter (A) and mix with 3 tsp chocolate paste (B). Set aside.
6. (C) Beat meringue till foamy, then add in cream of tartar. Gradually add in sugar and beat till firm peak.
7. Add 1/3 meringue (C) into chocolate batter. Fold it in and mix it well. Set aside.
8. Add in 1/2 of the balance meringue into yellow batter. Fold it in and mix it well. Then transfer the batter into the meringue bowl and mix it well.
9. Randomly scoop the yellow batter and chocolate batter into the lined pan. Smooth the top.
10. Use a chopstick to draw a few lines in the batter to create the marble effect. Smooth the top again.
11. Bang a few times on the table top to remove air bubbles.
12. Bake in 170c for 75mins with a cup of hot water in the oven.
13. Once done baking, remove from the pan immediately and let it cool down before cutting and serve.
