Makes 9-12 muffins. I was sick filming this video so I sound a bit congested. My mom and I love baking together so I wanted to share one of our go-to bran muffin recipes. It's a slight adaptation from the recipe on the back of our Wheat Bran package. All ingredients and instructions below:

Ingredients:
• 1 cup buttermilk. To make on your own, add 1 teaspoon white vinegar to 1 cup milk.
• 1 1/2 cups wheat bran
• 1 large egg
• 2/3 cup brown sugar
• 2 teaspoons vanilla extract
• 1/3 cup oil (we used canola oil)
• 1 cup all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 teaspoon cinnamon

Instructions:
1. If you don't have buttermilk, make your own by adding 1 teaspoon of white vinegar to 1 cup of milk. Give that a quick stir. In a medium-sized bowl, combine wheat bran with buttermilk. Mix so the liquid coats the wheat bran. Let sit for 10 minutes.
2. In a separate large bowl, add egg, brown sugar, vanilla extract, oil. Stir together. Now add bran mixture.
3. Sift in dry ingredients to prevent clumps: flour, baking powder, baking soda, salt. Then add cinnamon. Mix together until there's no white showing.
4. Scoop into 9-12 muffin cups. Wipe off batter that spills onto the baking sheet. Bake at 375°F for 18 minutes.
