CROISSANTS:
premade croissant dough
melted chocolate
1/2 cup flour
1 tbsp cocoa powder
1 tsp baking powder
6 tbsp yogurt
1. To make the chocolate bread dough for the feet: mix together the dry ingredients into a bowl before stirring in the yogurt. Knead the dough until smooth. Portion the dough into smaller balls and roll/shape them into little boots.
3. Place pairs of the chocolate dough boots onto the baking sheet. Place the premade croissant dough on top, and let them proof for 30 minutes.
4. Bake according to package instructions and let cool completely before piping on the little smiley face with melted chocolate. Enjoy : )
BIRTHDAY CAKE:
2 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
3 eggs
1 cup sugar
6 tbsp butter, melted
3/4 cup milk
2 tbsp oil
vanilla paste
whipped cream: 2 1/2 cups heavy cream, 1/2 cup powdered sugar, vanilla
strawberries, cocoa powder, melted chocolate
1. In a small bowl, whisk together the butter, oil, milk, and vanilla.
2. Into a large mixing bowl, beat together the eggs and sugar until it becomes fluffy and pale.
3. Add the flour, baking powder, and salt into the egg mixture, stiring just to combine. Slowly add in the wet mixture, while whisking until the batter is just combined.
4. Divide into batter between 2 (6 inch) pans and bake at 350 degrees F for 35-40 minutes. Cool completely and level before decorating!
5. To decorate: Pipe large dollaps of cream on top of the cake layer, all around the circumference. Into the center of the cream, place chopped strawberries and place the other cake layer over top. Repeat the piping around the edges and fill the center with more dollaps of cream. Place 5 halved strawberries on top, pipe the feet with chocolate whipped cream, add a little face with melted chocolate, and finish it with a candle : )
MARSHMALLOWS:
2 1/2 tbsp gelatin + 1/2 cup cold water
1/3 cup egg whites + 3 tbsp sugar
2/3 cup sugar
1 1/2 tbsp water
1 1/2 tbsp maple syrup
1 1/2 tbsp corn syrup
vanilla
1 tbsp cocoa powder + 1 tbsp hot water
2 tbsp strawberry juice
1. Dissolve the gelatin in cold water, set aside.
2. Beat together the sugar and egg whites until they reach soft peaks.
3. In a small saucepan, mix together the sugar, water, maple syrup, and corn starch until fully dissolved. On medium-low heat, bring the mixture to 240 degrees and remove from the heat.
4. Quickly whisk in the gelatin until fully dissolved.
5. With the mixer on low, slowly pour the sugar syrup into the egg whites. Once it’s fully combined, turn the mixer to high and whip until it reaches soft peaks, stirring in the vanilla during the process.
6. Divide the mixture accordingly, adding cocoa to one portion and strawberry juice to the other.
7. Pipe the vanilla and strawberry marshmallow into prepared cyclindrical molds and let set completely for 4-6 hours. (If it gets difficult to pipe, microwave it in 5 second increments!)*
8. Pipe the chocolate marshmallow feet and let it set before piping on the little faces!
Note: To prepare the molds, I oiled and dusted acetate sheets before taping them into my desired shapes. You can also use shot glasses, ramekins, cups, etc. instead or just free-hand the piping!
