Sheet Pan Palooza Collab with

In this episode of my Make Believe Cooking Show, I'm joining Sammi at @ManagintheMays for a Sheet Pan Palooza collab and making two of my very favorite sheet pan recipes ever! Sheet Pan quesadillas for 2 and the BEST. CHOCOLATE. CAKE. EVER. I promise these recipes do not disappoint!

Now, let's get to the recipes -

For the quesadilla, you'll need:
2 sheet pans similar in size
about 3 TBSP of butter (one to grease your pan and the other to melt and brush on top of the quesadilla before baking)
Flour tortillas - I used the regular taco size for this smaller pan, but if you're using a large pan, I recommend the burrito-size
pre-cooked, shredded chicken (or beef)
taco seasoning to taste
green chilles
salsa
shredded cheese of choice - I used sharp cheddar and mozzarella
any other fillings your heart desires - black beans or corn would be yummy
cilantro

In a sheet pan arrange the tortillas as shown with the sides hanging over the pan, overlapping and forming an envelope/pouch of sorts for your quesadilla
add your chicken and other ingredients
fold the sides over and top with an additional tortilla to cover the center
brush melted butter on top
place 2nd sheet pan on top and press down
bake with 2nd sheet pan on top at 450 degrees for about 20 minutes (until cheese is melted)
cut and serve with your choice of toppings. We suggest avocado, sour cream, diced tomatoes, cilantro and lime. You could add hot sauce or ranch too. Enjoy!
The small pan serves about 3-4 while a large sheet pan will serve 6-8 depending on how hungry your family is. Store any left overs in an airtight container in the fridge.
