For the Fish Rolls:

1 large fish fillet (about 1.9-2 kg, like cod or haddock), cut into portions

Salt and freshly ground black pepper, to taste

Lemon juice for marinating

For the Creamy Dill & Cheese Filling:

30g butter

2.5 tbsp vegetable oil

1 large onion, finely chopped

500g finely chopped cooked fish (from the fillet, or use canned fish like tuna or salmon)

150g grated cheese (Suluguni or any firm, meltable cheese)

2 tbsp sour cream (or mayonnaise)

1 tsp chopped fresh dill

1 tsp chopped fresh parsley

Optional: finely chopped fresh onion or garlic to taste

For the Sauce:

1-2 tbsp sour cream (or mayonnaise)

1 clove garlic, minced (optional)

Instructions:

Preparing the Fish:

Marinate the Fish: Season the fish portions with salt, pepper, and lemon juice. Let marinate for about 2 minutes.

Pan-Fry the Fish: Heat a little vegetable oil in a skillet over medium heat. Pan-fry the marinated fish portions for about 2-3 minutes per side until lightly golden and cooked through. Remove from skillet and set aside to cool.

Making the Savory Filling:

Sauté Aromatics: In the same skillet, add a little more oil if needed. Sauté the finely chopped onion until softened.

Cook the Fish: Finely chop the cooked fish fillet. If using canned fish, drain it well.

Combine Filling Ingredients: In a bowl, combine the chopped cooked fish, grated cheese, sour cream (or mayonnaise), chopped dill, parsley, and any optional onion or garlic. Season with salt and pepper to taste. Mix everything well.

Assembling the Fish Rolls:

Prepare the Fish Fillets: Once the fish fillets are cooked and cooled, you can lightly press them to make them easier to work with.

Stuff the Fish: Place a portion of the filling onto a piece of cooked fish fillet.

Roll it Up: Carefully fold or roll the fish around the filling. You can also arrange the filling on top of the fish if rolling is difficult.

Arrange and Cook: Place the fish rolls in a baking dish. Drizzle with the prepared sour cream/mayonnaise sauce.
