Coffee Cake with Cinnamon Crumbs

Coffee Cake with Cinnamon Crumbs

For Cinnamon Crumbs

You'll need:
1/4 cup All-Purpose flour
1/4 cup brown sugar
1 tbsp white sugar
1 tsp ground cinnamon
2 tbsp unsalted butter, melted
1/4 tsp pure vanilla extract

Easy Coffee Cake Recipe

You'll need:
2 and 1/2 cups All-Purpose flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup buttermilk (substitute: 1 cup milk plus 1 tsp vinegar or lemon juice. Stir and sit for 5-10 minutes)
3/4 cup granulated sugar
6 tbsp unsalted butter, melted
1/4 cup olive oil
2 large eggs, lightly-beaten
Coffee mixture (dissolves 2 tsp instant coffee in 2 tbsp warm water)
Cinnamon Crumbs for toppings

Bake in a preheated oven at 400°F for 5 minutes. Reduce the oven temperature to 350°F and bake for an additional 20 minutes or until the inserted toothpick comes out clean. I'm using a 12.9x9x1 inches baking pan in this recipe.
