This is the first video of our five-part series on HACCP and GMP. Here we introduce the key elements of HACCP, as a quality management system and then introduce hazards - hazards are the most important aspect of HACCP because hazards are what we are looking for and creating your HACCP plan to control. Therefore they are fundamentally important and an understanding of what a hazard is (chemical, microbiological and physical) is essential to further understanding of the HACCP system. We do hope this provides you with a great starting point to delve deeper into HACCP, if that is what your goal is, or to understand what HACCP is, how it is used and why, if you are requiring a top-level introduction without the nitty-gritty details of how it works or how to get it done.
