650g Spanish Mackerel, cut into 3.5cm thickness slices
200g Young Ladies Finger, stemmed and cut into half diagonally
120g Tomato, cut into wedges
200ml –230ml Oil
80g Tamarind Pulp
1200ml Water
3 Leaves Kaffir Lime Leaves
3 Stalks PolyganumLeaves / Vietnamese Mint
2 Stalks Torch Ginger Bud

Finely Ground Paste:
240g Shallot, sliced
25 Dried Chillies, boil till soft; remove stem and seeds
8 Fresh Red Chillies, sliced
7 Candlenuts, slice thinly
4 pips Garlic
3 stalks Lemongrass, sliced
2.5cm Young Galangal
2.5cm Dried Shrimp Paste, square slice
1cm Fresh Turmeric, sliced
Seasoning:
5tsp Sugar
3½ tsp Anchovy Granules
1¾tsp Salt
