It's time to PACK! We are just a couple of short weeks away from moving into our new cabin! We're so excited about the move. We shared in a recent LIVESTREAM that we just bought our dream cabin!!! Our new cabin is actually the original cabin we wanted when we were looking to buy in Alaska, but the negotiations with the seller didn't work out in our favor so we walked away from it and bought the cabin that we're in now. When our dream cabin became available again, we jumped on it! Winter is right around the corner, we're in a mad dash to pack & get the homestead moved before the first snowfall. GF SANDWICH BREAD:
3 cups gluten-free (GF) all purpose flour
Two packages or 2-1/4 ounce of active dry yeast
2 teaspoons xanthan gum, omit if GF flour blend already has it.
1 tsp salt
1 cup water, plus additional as needed
1/4 cup olive oil (or oil of choice)
2 eggs, at room temperature
1 TBS honey
1 tsp apple cider vinegar

1. Prepare 9 x 5” loaf pan by spraying with nonstick cooking spray & sprinkle flour to coat.
2. Combine 3 cups flour, yeast, xanthan gum (if using), & salt in large bowl. Whisk one cup water, oil, eggs, honey, and vinegar together in medium bowl. Beat into dry ingredients with electric mixer at low speed until batter is smooth, shiny and thick. Add more water by tablespoonfuls if needed. Beat at medium high speed five minutes, scraping bowl occasionally.
3. Spoon batter into prepared pan. Cover with lightly oiled plastic wrap. Let rise in warm place 30 minutes or until batter reaches the top of the pan.
4. Preheat oven to 375°F. Bake 30 to 35 minutes until bread sounds hollow when tapped and internal temperature is 200°F. Remove from pan and cool on wire rack. Enjoy!

GF BISCUITS:
2-1/2 cups gluten-free (GF) all purpose flour
1/2 tsp xanthan gum, omit if flour already contains it
1 TBS GF baking powder
1 tsp salt
2 TBS sugar
1 cup, buttermilk (I use homemade milk kefir)
6 TBS butter (put butter in freezer to get cold for about 30 min).
1 large egg
2 TBS GF all purpose flour

1. Preheat oven to 450°F
In a large bowl, add the GF flour, baking powder, salt, sugar, and give it a quick whisk to combine.
2. Cut or grate frozen butter into flour mixture until it looks like the size of small peas.
3. Add in the buttermilk (or kefir) and the whisked egg and stir until a soft dough forms. (I whisk the egg right into the buttermilk or kefir). The key is to not over mix because the dough it will yield tough biscuits. The dough will be sticky.
4. Add 1 TBS flour to a large piece of parchment paper on the counter, do not roll out the dough. Place the dough on top of the flowered parchment paper. Dust the top of the dough with 1 TBS flour and gently fold dough over on itself two times.
5. With your hands form a dough round about 7 inches in diameter & 1 inch thick. If you make it any larger or flatter, you will end up with hard, flat biscuits.
6. Cut out 2 inch biscuits using a biscuit cutter, the mouth of a glass or the lid of a mason jar. Do not twist cutter when cutting; this will crimp the edges of the biscuit, causing it not to rise well. Reform the scraps into a dough round & cut out more biscuits. Put the biscuits on a greased cookie sheet. Makes approx 12 biscuits. Bake biscuits for 15 to 20 minutes at 450°F. At the 15 minute point check biscuits to see if their golden brown, all ovens are different. I like to brush melted butter on top of my warm biscuits. Serve warm and enjoy!
