One Pot split peas (chana dal) and spinach curry is an easy weeknight, meatless dinner packed full of Indian spices! Chickpeas are simmered in an amazing sauce and ready in 30 minutes!

Serves: 4 Cooking Time: 30 Minutes
Spice Level: Medium 🌶 🌶 Preparation Time : 10 Minutes.


Ingredients
1 cup yellow split peas (chana dhal)
1 tbs coconut oil
1 tsp mustard seeds
1 tsp grated ginger
1 tsp grated garlic
1 tsp green chilli (skip this to keep mild)
1 onion
1 tsp coriander powder
1 tsp mild chilli powder
1/2 tsp turmeric
1/2 tsp garam masala
1 tsp salt
3 tomatoes(200g can chopped tomatoes)
1.3 l water
150g spinach
1 tbs coriander leaves


Preparation:

1. Wash and soak the split peas and set aside while you prepare the other ingredients.
2. Heat the oil in a saucepan over medium heat and fry the grated ginger and garlic for 1 to 2 minutes.
3. Add the chilli and finely diced onion and fry for 5 minutes.
4. Add in the spice powders- coriander, chilli, turmeric and garam masala and cook stirring for 2 minutes over low heat.
5. Add the chopped tomatoes(fresh/ canned) and cook until soft.
6. Add water and drained split peas. Cover and cook for 30 minutes over medium heat or until the peas have started to soften. Add more water if the mixture runs dry.
7. When the peas are soft, add spinach and cook for 2 more minutes.
8. turn off the heat, add some coriander leaves and cover with lid.
9. Serve with warm naan breads/ flat breads/ pita breads or hot basmati rice

NOTES:
You can add 2 diced sweet potatoes along when you are cooked the peas for 20 minutes, to make it as a complete one pot meal.
