Macros per 100g cooked white rice and 1 serving of (about 300g):
Cals: 531, Protein: 38.1g, Carbs:56.1g, Fat: 17.4g
This recipe makes 2 servings.

Ingredients:
1/2 package of Yuba(bean curd) sticks (about 4)
1 tsp sesame seed oil
1-2 tbsp low sodium soy sauce or use dark soy sauce for more color and flavor
1 - 1.5 tbsp coconut brown sugar
9-10 cloves of garlic (finely chopped)
1/2 tsp chili flakes (per taste)
1/3 cup chopped green onions
1 red, yellow or green bell pepper ( I highly recommend using green bell pepper if you can)
5-6 shitake mushrooms (finely diced)
1 small carrot (diagonally sliced)
1 tbsp corn starch (mixed in 200 ml cold water, add more water if you want more sauce)

Directions:
Start by gently breaking bean curd sticks with your hands in small pieces and soak them in cold water for about 1-2 hours. Make sure to check in between and flip them around so that they can evenly get soft on each side. Use a heavy plate to sink them in as these sticks tend to float on top.
Once sticks are soft, drain and rinse with cold water. Squeeze out excess water, keep aside. Chop all your ingredients and begin by sautéing garlic in a frying pan with a tsp of sesame seed oil, after about a minute add green onions and chopped shitake mushrooms. Add some soy sauce, chili flakes, Give it a nice mix, close lid and let it cook for about 5 minutes or till mushrooms start to release water. After 5 minutes, remove lid, add rest of the veggies, more soy sauce if needed, brown sugar, mix and cook for another 3-4 minutes. Then add bean curd sticks and corn starch slurry. Mix and let it simmer for about 3-4 minutes. Once done, remove from heat, add green onions on top with toasted sesame seeds. Enjoy on white rice.
