There are certain things I will probably never make from scratch and this is when I rely on my good friend Trader Joe's. Trader Joe's ready-to-bake chocolate croissants, blintzes and latkes are some of my favorite foods. The chocolate croissant is my newest crush. There is something fun about letting the little flat cold croissant rise overnight into a puffy pillow of joy... ready to be baked in the oven or toaster oven. Both the blintzes and latkes take only minutes to crisp up in a little oil or butter. I love elaborate breakfast food, but I don't enjoy making it, hence my love of fancy breakfast buffets. If you don't have a Trader Joe's near you, I am sorry and I recommend that you visit one the next time you travel somewhere that does. Trader Joe's has the knack for bringing back classics without any unnecessary ingredients and also introducing us to flavors from around the world at affordable prices. There are few stores in this day and age that have a real brand and a soul. Trader Joe's has plenty of both.

If you make the chocolate croissants in your toaster oven, make sure that the tray is at the lowest setting so you don't burn the top of that gorgeous pastry.
