Just want to share my way of roasting crispy pork belly in a convection oven.

1 KG PORK BELLY BONELESS
1/2 CUP SOY SAUCE
1/2 TSP BLACK PEPPER POWDER
1 TSP OIL
1 TSP FINE SALT

1. SCORE THE MEAT - THAT IS TO MAKE A SHALLOW CUT/SLICE ON THE MEAT FOR MARINATION (BOTH SIDE);
2. PUT SOY SAUCE AND BLACK PEPPER POWDER IN A BOWL, MARINADE THE MEAT FOR 1 HOUR, PUT IT IN A FRIDGE...MAKE SURE NO SAUCE ON THE SKIN;
3. AFTER ONE HOUR, TAKE THE MEAT OUT FROM THE MARINADE AND MAKE SURE THE SKIN IS DRY....RUB / SPREAD THE OIL AND RUB THE 1/2 TSP OF SALT AND SPRINKLE THE REMAINING SALT ON THE SKIN...TO MAKE IT CRISPY;
4. ROAST FOR 30 MINUTES IN 225 DEGREES F;
5. IF THE TIMER REACHES 30 MINUTES...THEN ROAST AGAIN FOR ANOTHER 30 MINUTES IN 180 DEGREES F;
6. READY TO SERVE.
