Thanksgiving Stuffing:
18 cups bread of choice cubed toasted or air dried (I used 1 1/2 loaves sourdough)
1 1/2 pounds sausage of choice (optional)
2 sweet or yellow onions large dice
4 celery stalks large dice
5 garlic cloves sliced
8 oz unsalted butter (save 2 oz for the dish and top)
2 tbsp chopped sage
1 tbsp chopped rosemary
2 tsp herbs de province
10 sprigs stripped thyme
4 1/2 cups turkey or chicken stock
1 cup turkey or chicken stock mixed with 3 eggs
Salt and pepper to taste

Rosemary salt recipe:
1 cup kosher salt
14 sprigs of rosemary stripped
8 sprigs sage stripped
3-5 cloves of garlic (3 if they are big and 5 if small)
1 lemon zested

Rosemary salt weighted recipe
250 grams of kosher salt
8 grams of fresh sage leaves
16 grams fresh rosemary leaves
20 grams of fresh garlic
3 grams of fresh lemon zest
