🍗 Chicken Biryani – Ingredients

For Chicken Marination:
• 500 g chicken (with bone)
• 1 cup curd (yogurt)
• 2 tbsp ginger-garlic paste
• 2 tsp red chili powder
• 1 tsp turmeric powder
• 1 tbsp coriander powder
• 1 tsp garam masala
• 2–3 tbsp lemon juice
• Salt as per taste
• 2 tbsp oil
• A handful of chopped mint and coriander leaves

For Rice:
• 2 cups basmati rice
• 4 cups water
• 2–3 cloves
• 2–3 cardamoms
• 1 bay leaf
• 1 cinnamon stick
• 1 tsp salt

For Biryani:
• 3 tbsp oil or ghee
• 2 medium onions (thinly sliced and fried golden brown)
• Saffron soaked in 2 tbsp milk (optional)
• Fresh coriander and mint leaves for layering

🔥 Making Method

1. Marinate the Chicken
• In a bowl, mix yogurt, ginger-garlic paste, spices, lemon juice, salt, mint, and coriander.
• Add chicken pieces and coat well.
• Marinate for at least 1 hour (or overnight for best taste).

2. Cook the Rice
• Boil water with salt and whole spices (cloves, cardamom, cinnamon, bay leaf).
• Add soaked rice and cook until 70–80% done.
• Drain and keep aside.

3. Cook the Chicken
• In a large pan or handi, heat oil/ghee.
• Add marinated chicken and cook for 8–10 minutes until it’s half cooked.

4. Layer the Biryani
• In the same pan, spread half-cooked chicken at the bottom.
• Add a layer of rice on top.
• Sprinkle fried onions, mint, coriander, and saffron milk.
• Repeat layers if needed.

5. Dum Process (Steaming)
• Cover the pot with a tight lid or dough seal.
• Cook on low flame for 20–25 minutes.
• Let it rest for 10 minutes before opening.

6. Serve
• Mix gently from bottom to top.
• Serve hot with sliced onions, lemon, and raita.
