I had previously uploaded a video showcasing some of this stuff, but learned a bit more and wanted to do something more comprehensive.

Parrying has been changed a lot in the Nightfall demo. Some enemies are still able to be conventionally parried, but many now require substantially more effort to secure a riposte. A successful riposte is rewarded with a bit of health recovery though, so that's cool!

Additionally, a Sekiro style "deflect" mechanic has been added to the game where you can parry an enemies attack with your own attack. Interesting, but requires substantial effort against many enemies.

Overall, I would say parries have been significantly nerfed in comparison to the vanilla game. That's not a bad thing in my mind, parrying in Dark Souls 1 made some situations braindead easy after learning the timings and Nightfall is trying to push it's new combat system. A huge part of that is the change they've made to two handing, so it makes sense for the game to not want you to have your shield out.

Part of me does feel as if the weapon deflects are a little...not strong enough? Deflecting an enemies attack upwards of five times for a riposte doesn't feel great considering the timing element is substantially harder already. Would be cool to see some tuning there, but no biggie.
