Walnut Meat (9/10)
1. Soak walnuts for 24 hours.
2. Drain water, place walnuts in a food processor, and blend.
3. Add sun-dried tomatoes, grapeseed oil, onion powder, oregano, basil, sea salt, cayenne pepper, and any seasonings you’d normally use on meat. Blend until it reaches a taco-meat consistency.
4. Heat grapeseed oil in a pan, sauté chopped onions until brown. Add the walnut meat and 1-2 tbsp of spring water.
5. Once water cooks out, add another tbsp of oil and cook until browned.
Vegan Cheese (3/10)
1. Soak 1 cup of cashews for 2 hours (overnight is best).
2. Blend cashews with 1/4 cup nutritional yeast, 2 tbsp tapioca starch, 1 tbsp lemon juice, 1 tbsp apple cider vinegar, 1 tsp garlic powder, 1 tsp onion powder, and 1/2 tsp sea salt.
3. Pour the mixture into a saucepan, cook over medium heat while stirring until it gets gooey (about 5-7 minutes).
4. Pour into a mold, let it cool, then refrigerate for 2 hours until firm. (But, I give this cheese a 3/10, didn’t use the rest!)
Tomato Sauce
1. Chop fresh tomatoes, cook them down with oregano, basil, Tony Chachere's, and whatever seasonings you use for tomato sauce.
2. Add a bit of water to help it break down, then blend with honey and barbecue sauce.
3. Keep adjusting the seasoning to your taste.
Assemble the Sloppy Joe (10/10-over all):
Place the walnut meat on your bread (no homemade bread recipe here 'cause I hated it), top with the sauce and cheese (or skip the cheese, I did). Boom, vegan sloppy joe done!
