I don’t know about you, but if there’s a sticky toffee pudding on the menu, I’m ordering it every time. It’s a true British classic - rich, moist and unapologetically indulgent.
This one’s built around a warm caramelised sponge that’s enriched with dates, and soaked in the most amazing sweet and salty toffee sauce that’s full of shine. On top, a cold mound of ice cream for the perfect contrast and some more sauce for drizzling.
The process is actually quite simple, but there are a few key techniques here that make this version really stand out.
