This was the first week that I decided to challenge myself to cook using only items we already have in our pantry, fridge, and freezer to save some money and try to use up what we have. I hope you enjoy!

Recipes

Zucchini Bread - Yields 2 loaves
2 cups sugar
3 eggs
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 cups flour
1 teaspoon cinnamon
2 cups shredded zucchini, freshly shredded or frozen and thawed
Chocolate chips, optional
Preheat oven to 350°F. Bake for 35-45 mins in greased loaf pans until toothpick inserted into center of loaf comes out clean. Mine took almost an hour because I used frozen zucchini so it had more liquid.

Pork Chop Casserole

Cabbage and Noodles (the right way per my mom, not how I did it lol)
1-2 Tablespoon butter
1 Tablespoon olive oil
1/2 of a head of cabbage, thinly sliced, rinsed thoroughly, and drained
1/4 of an onion, thinly sliced or 1/2 - 1 teaspoon onion powder, or to taste
1 package of wide egg noodles, cooked and drained
butter to taste
Chicken boullion granules
Salt and pepper
Melt butter and olive oil in large skillet with lid, add cabbage and onion and stir to coat in oils. Cover and let cook down stirring occasionally until cabbage and onion have become very soft and browned slightly then add the cooked noodles, more butter to taste (at least a few tablespoons) and then season with chicken bouillon, salt and pepper to taste.
