Many, many decades ago, when Ezidis were forced to leave their home country and their holy temple Lalish, they escaped to neighbouring countries and found shelter.
Many were able to make a living by working in agriculture and animal farming, some working on other peoples' farms.
One Ezidi man, who worked as a farm labourer at a rich man's house, was told on a winter night to slaughter a cow for this rich man. This rich man tells the Ezidi man to get rid of all the cows organs, including the tripe and stomach, as a rich man wouldn’t eat this. The Ezidi man, who wasn't paid properly and could hardly feed his family, takes home the 'waste' (which is what the rich man called offal and other leftover parts of the cow, such as hooves).
This poor Ezidi man tells his wife to boil the cows tripe and feet in some water, salt and garlic. (He uses the other organs of the cow to make something else which I promise I will share with you a little later on).
They boil the cows tripe and feet a whole night, until the tripe becomes tender. The next day, early morning before the Ezidi man goes to work, the family wake up to eat with him too. In Ezidi culture, it is a sign of respect and love to eat together. The wife serves this dish for her family and they sit down and eat it with “nane losh” (Ezidi bread). The kid's are delighted with the taste of this meal, and say, “bavo, bavo! xasha, xasha! ” which in English means, “father, father. It's delicious, delicious!”. From that day on, this dish was called Xash.
This meal has become a staple in Ezidi households, and every generation makes Xash. Of course, the story of how Xash was made lives on.
