Ingredients:
4–5 medium carrots, grated
2 cardamoms, crushed
2 tbsp ghee
1 cup milk (add more if needed)
3–4 tbsp milk powder (adjust for sweetness)
2 tbsp desiccated coconut (for mixing)
½ cup dry coconut, soaked and grated
A pinch of orange food colour (optional)
5–6 almonds, soaked and chopped
5–6 cashews, soaked and chopped
5–6 pistachios, soaked and chopped
1 tbsp raisins, soaked
Extra desiccated coconut for coating
Chopped almonds and pistachios for garnish
Instructions:
Prepare Dry Fruits and Coconut:
Soak almonds, cashews, pistachios, and raisins in warm water for a few minutes. Drain, chop them, and set aside.
Soak the dry coconut in water until soft. Break into small pieces and grind them in a mixer to make grated coconut. Keep aside.
Prepare Carrot and Cardamom:
Grate the carrots finely and crush the cardamoms. Set both aside.
Cook the Carrot Mixture:
Heat ghee in a pan. Add the grated carrots and sauté on medium flame until the raw smell goes away.
Add the crushed cardamoms and mix well.
Add Milk and Cook:
Pour in milk and cook the carrots until soft. Keep adding milk gradually as it gets absorbed.
Add Milk Powder and Check Sweetness:
Once the carrots are cooked, add milk powder. Mix well and taste — add a little more milk powder if you want more sweetness. (No sugar is added in this recipe.)
Add Dry Fruits and Coconut:
Add the chopped almonds, cashews, pistachios, raisins, and grated coconut. Stir continuously.
Add Colour (Optional):
Add a pinch of orange food colour for a vibrant look and mix evenly.
Thicken the Mixture:
Keep stirring until the mixture thickens and leaves the sides of the pan. Remove from heat and let it cool.
Shape into Laddus:
When slightly warm, shape the mixture into small laddus. Roll them in desiccated coconut for a beautiful coating.
Garnish and Serve:
Garnish each laddu with chopped almonds and pistachios. Serve or store in an airtight container.
