How to Make Authentic Mangalorean Mushroom Ghee Roast - A Flavorful Delight

Ingredients:
Mushrooms: 1 bowl (sliced)
Kashmiri red chilies: 4–5 (soaked)
Cashews: 8–10 (soaked)
Ginger: 1-inch piece (grated)
Garlic: 4–5 cloves (grated)
Tamarind pulp: 1 tbsp
Yogurt: 1 tbsp
Cinnamon stick: 1-inch
Cloves: 2–4
Bay leaves: 2–3
Ghee: 2–3 tbsp
Turmeric powder: 1/2 tsp
Cumin powder: 1 tsp
Coriander powder: 1 tbsp
Sugar: 1 tsp
Kasuri methi (dried fenugreek leaves): 1/2 tsp
Salt: to taste
Water: as needed
Fresh coriander leaves: for garnishing
Step-by-Step Instructions:
Soak the Spices:
Soak Kashmiri red chilies and cashews in warm water for 5–7 minutes.

Sauté the Mushrooms:
Heat 1 tbsp ghee in a pan and sauté the sliced mushrooms until slightly browned. Remove and set aside.

Grind the Paste:
Blend the soaked chilies, cashews, ginger, garlic, tamarind pulp, and yogurt into a smooth paste.

Temper the Gravy:
In a separate pan, heat 2 tbsp ghee. Add cinnamon, cloves, and bay leaves. Sauté for a few seconds.

Cook the Paste:
Add the ground paste to the pan. Cook for 5–6 minutes until the raw smell disappears.

Add Spices and Adjust Consistency:
Mix in turmeric, cumin, coriander powder, sugar, and salt. Add water gradually to reach your desired gravy consistency.

Combine and Cook:
Add the sautéed mushrooms to the gravy. Stir well, cover, and simmer for 7–8 minutes on low heat.

Garnish and Serve:
Sprinkle Kasuri methi and fresh coriander leaves on top. Serve hot with naan, roti, or steamed rice.
