RECIPE

Spread fresh whitebait on draining basket. Apply 2% of salt to whitebait. Put them in fridge for about 1 hour to dehydrate.

Mix up ratio of 2 potato flour to 1 rice flour. Mix flour with whitebait and remove extra powder.

Heat up “TAIHAKU” sesame oil to 200℃ then deep-fry them.

Green salt matches well with it.
