Ingredients needed for the Fat-cake dough:
• 6 Cups flour (900g),
• 700ml Lukewarm water,
• 3 tsp Yeast,
• 2 tsp Baking powder (optional),
• 1 tsp Salt,
• 4 Tbsp Sugar,
• 2 Tbsp Cooking oil for dough,
• Oil for frying in pan or pot.

Ingredients needed for the filling:
• 500g Mince/ Ground Beef,
• 1 Tbsp oil for pan,
• 1 Can Tomato & onion mix (410g),
• 4 tsp Curry Powder,
• 1 tsp Salt,
• Paprika,
• Italian herbs spices,
• Steak & Chops Spices,
• 4 tsp Curry Powder (Add more depending on how hot you want or prefer it).
Please Note: This is what I used; you can spice it according to your preferences.

Instructions for the Fat-cake dough:
Into a mixing bowl;
• Add 6 Cups (900g) flour,
• Add 4 Tbsp Sugar,
• Add 1 tsp Salt,
• Add 3 tsp Yeast,
• Add 2 tsp Baking Powder and mix until well blended together.
Make a well into the center of the dry ingredients.
• Add in 500ml Lukewarm water and mix until dough begins to form,
• Add 2 Tbsp Cooking oil and mix again,
• Add a bit more lukewarm water at a time then mix until sticky dough starts to form (about 200ml),
Place dough on a floured surface and knead for 5 to 10 minutes and form into a ball.
Add 1 Tbsp oil (or cooking spray) to a mixing bowl and rub it onto the sides, place dough inside the bowl then rub oil onto the top of the dough ball to avoid sticking to the cling wrap when risen and cover with clingwrap. Set aside in a warm place for 1 to 2 hours or until it has doubled or tripled in size.

Instructions for the Mince/Ground beef Filling;
Once the dough has risen, start preparing your filling. Add 1 Tbsp cooking oil into a pan and put it on medium heat.
• Add 500g Mince/ Ground Beef into the pan and add spices according to your preferences.
• Fry on medium to high heat until all the meat has turned brown.
• Put your heat to low, then add 1 Can Tomato & onion mix (or cut 1 Onion & 2 Tomatoes and add it into the pan),
• Once it is well combined with the Mince/Ground Beef and it is slightly cooked,
• Then add 4 tsp Curry powder and mix until well combined (Add more Curry depending on how hot you prefer it),
• Let it cook on med heat for 10 minutes (stirring often), then turn heat to low and let it simmer while frying the Fat-cakes.

Instructions for frying the Fat-cakes/ Vetkoek/ Amagwinya / Puff Puff;
• Add oil to hands (to avoid dough from sticking onto it),
• Punch air out of dough once risen,
• Using the leftover oil on your hands, rub it onto the surface/ Counter where you will be making your dough balls, then place the dough onto the oiled surface,
• Flatten the dough and shape the fat-cake balls according to your preferred sizes, (TIP: Fry a small dough ball to test your temperature of the oil before adding the main ones),
• On high heat, fill your Frying Pan or Pot with cooking oil until half of the pan or pots size (as shown on the video),
• Once your oil is beginning to boil, place your small dough into the oil and fry for about 3 – 5 minutes per side or until it looks evenly golden brown on each side.
• Add your bigger Fat-cakes once the small one is done frying,
• Keep an eye on the colour of the fat-cakes,
• If its slightly brown let it fry for 1 – 2 minutes more.
• Turn it once its nice a golden brown and repeat on opposite side.

A few Tips:
• I pressed down on the fat-cakes while it was starting to puff up so that it could fry evenly on both sides and to avoid it coming out raw on the inside (as shown in the video 08h30 minutes into the video)
• If you’re still not sure if it’s cooked in the center/ Middle, stick a knife into it and if the dough sticks to the knife, then it is still raw.
• If you have kitchen towels, place the fried Fat-cakes on it once done frying to remove excess oil (as shown in the video, skip to part 08h58 for an example).
• Serve & enjoy while Hot or Cold 😊
