Stuffed Turai Sabzi
Ingredients :
1/2 kg Turai (thin sized Ridge Gourd)
Mildly roasted 1 tbs White Sesame Seeds (Safed Til)
Mildly roasted 2 tbs Peanuts (Sing)
1 tbs grated dry Coconut
2 Garlic Cloves & 1 Green Chilli
1 tsp Turmeric Powder (Haldi)
2 tsp Red Chilli Powder
2 tsp Coriander-Cumin Seeds Powder (Dhaniya-Jeera Powder)
1 tsp Garam Masala (alternatively Kitchen King Masala can be used)
Salt to taste
1 tsb Oil in a pan
1 tsp Fennel Seeds (Saunf)
1 tsp Cumin Seeds (Jeera)
Pinch of Asafoetida Powder (Hing)
Few Curry Leaves (Kadi Patta)
Chopped Coriander (Dhaniya)
Method :
Take Turai, remove its skin and cut it into big pieces
Make a cut in the middle of each pieces
Further to prepare masala stuffing,take mildly roasted 1 tbs Safed Til and 2 tbs Peanuts in a mixer jar
Add 1 tbs grated dry Coconut
Add 2 Garlic Cloves & 1 Green Chilli
Add 1 tsp Turmeric Powder
Add 2 tsp Red Chilli Powder
Add 2 tsp Coriander-Cumin Seeds Powder
Add 1 tsp Garam Masala
Add Salt to taste and coarsely churn the mixture
Fill this stuffing in all pieces (keep remaining stuffing aside)
Heat 1 tsb Oil in a pan
Add 1 tsp Fennel Seeds
Add 1 tsp Cumin Seeds
Add a pinch of Asafoetida Powder
Add few Curry Leaves
Place stuffed Turai in the pan and sprinkle some water on it
Cover the lid and cook it on slow to medium heat
Check once the sabzi is partially cooked
Add remaining stuffing in it and cook for another 5 min
Add finely chopped Coriander and turn off the heat
