Welcome to today's special breakfast episode! In collaboration with Nilu's Kitchen, we're bringing you a delicious, healthy, and easy-to-make recipe - Bajre Ka Dhebra. This traditional Gujarati breakfast dish is perfect for a nutritious start to your day. Made with Bajra (pearl millet), it's rich in fiber and great for digestion, giving you energy to kickstart your morning.

Ingredients
Bajra atta (pearl millet flour)- 2 cups
Spring onion greens (finely chopped)- 1/4 cup
Fresh methi leaves (fenugreek, finely chopped)- 1/2 cup
Green garlic leaves (finely chopped)- 3 tbsp
Red chili powder- 1 tsp
Coriander powder- 1 tsp
Roasted cumin powder- 1/2 tsp
Green chilies (finely chopped)- 3
Fresh coriander leaves (finely chopped)- 2 tbsp
Ghee- 1 tbsp
Curd- 2 tbsp
White sesame seeds- 1/4 tsp
Ginger (grated)- 1 tsp
Salt and pepper- to taste

Method
-Combine all the greens (spring onion, methi, garlic leaves) in a large mixing bowl. Mix them well till they release moisture.
-Add the bajra atta, followed by the dry spices, grated ginger, and salt & pepper.
-Add freshly chopped coriander leaves. Mix thoroughly.
-Gradually add water to form a semi-soft dough. Knead well and incorporate 1 tablespoon of ghee into the dough.
-Take a small portion of the dough, sprinkle sesame seeds onto a rolling board (chakla), then place the dough ball on top of the seeds and press gently.
-Using a little dry flour, roll the dough into a flat disc.
-Heat a tawa (griddle) on medium flame. Place the rolled dhebra on the tawa and cook it over medium heat. Apply desi ghee while cooking till both sides turn golden brown.
-Serve hot with dahi baingan for a delightful pairing.
