Personally, I've always loved gluten-free cakes and desserts more than normal cakes. Being somewhat health-conscious, I wanted to find an easy healthy muffin recipe. So I was rather pleased when this buckwheat sweet potato muffin turned out to be fluffy and soft. I used honey instead of sugar for sweetness as it adds to the complexity and goes perfectly with the sweet potato.

Buckwheat flour has traditionally been used in French crepe recipes and I was inspired by that, so I thought of using it in my gf muffin mix.

When cooking the muffin in my electric pie maker, it only took me 5 minutes to prepare and 10 minutes to cook. This quick gf snack will be a good addition to my list of quick last-minute dessert recipes.
