Welcome back to What’s For Tea. Today I made this delicious tray of Bakewell slices! I’ve used a tray bake tin, but you could use a traditional round tart tin or even small individual tarts if you wanted :) I’m using raspberries but you could swap them out for cherries if you prefer.

What I used - made in a 18 x 30cm tin

375g (around 14oz) Sweet short crust pastry
5 Tablespoons raspberry or apricot jam
100g (3.5 oz) Frozen raspberries - Thawed
25g (1 oz) Flaked almonds

200g (7 oz) Soft unsalted butter
200g (7 oz) Sugar - I used caster sugar
100g (3.5 oz) Ground almonds
100g (3.5 oz) Self raising flour
1 teaspoon baking powder
1/2 Teaspoon almond extract
4 Medium eggs - beaten
